2/3 cup flour
1/2 cup Dutch processed cocoa
2 teaspoons instant espresso powder
1/4 level teaspoon baking soda
1/4 teaspoon salt
2, 1 ounce blocks finely chopped bittersweet chocolate
2 tablespoons canola oil
1/3 cup unsweetened applesauce
1/4 cup pourable brown sugar substitute
1/4 cup granulated sugar
2 tablespoons dark corn syrup
2 teaspoons vanilla extract
2 egg whites
Recipe
Preheat the oven to 325.
Coat an 8x8x2 inch baking pan with cooking spray.
Stir together in a small bowl, the flour, cocoa, espresso powder, baking soda, and salt. Set aside.
Use a heavy, medium saucepan and combine the bittersweet chocolate and the oil.
Cook over a low heat, stirring constantly, until the chocolate is completely melted, about 2 minutes.
Remove from heat to let cool slightly.
Stir in the applesauce, sugars, corn syrup, and vanilla and beat until smooth, for about 1 minute.
Add the egg whites and continue to beat until the sugar is dissolved, about 1 minute more.
Add the flour mixture and stir gently until smooth, about 2 minutes.
Spread evenly in the baking pan and bake until a tester inserted into the center comes out almost clean, with a few fudgy crumbs, for about 15 - 20 minutes.
Cool completely on a rack before cutting.
Makes 16 servings.
