    Grilled - Shrimp w/Pasta + Pineapple Salsa

    Grilled Shrimp with Pasta + Pineapple Salsa



    2 lbs. pineapple chunks, packed in their own juice, drained

    1 large red bell pepper, chopped

    1 large red onion, chopped

    1 jalapeno pepper, minced

    1/2 c. orange juice

    1/3 c. lime juice

    1 1/2 c. shrimp, peeled and deveined

    6 c. rotini pasta, cooked al dente to pkg. directions

    Recipe

    Use a large bowl to combine the pineapple, bell pepper, onion, jalapeno pepper, orange juice, and lime juice.

    Oil the rack on your grill and set 4" from the heat.

    For a gas grill, use a high heat.

    Grill the shrimp on each side for 2 minutes.

    Toss the pasta with the salsa.

    Place the shrimp on top, and serve.

    Makes 6 servings.
