    Breakfast - Grits + Cheese Chile Pie

    List of Ingredients

    3 c. water
    3/4 c. quick cooking hominy grits
    1 c. shredded reduced fat Monterey Jack cheese, (4oz.)
    3 thinly sliced green onions with tops
    1 large beaten egg, or 1/4 c. egg substitute
    1/4 tsp. hot pepper sauce
    2 4oz. cans whole green chilies, drained and patted dry

    Recipe

    Preheat the oven to 350. Need a 9" pie pan.
    Bring water to a boil in a medium saucepan.
    Slowly stir in the grits and simmer until thickened, about 3 - 5 minutes, stirring frequently.
    Remove from heat.
    Stir in the cheese, onions, eggs or egg substitute, and pepper sauce.
    Place the chilies in the pie pan like wagon wheel spokes, with the larger ends against the edges of the plate and the
    tips forward the center.
    Pour the grits mixture evenly over the chilies.
    Bake for 30 minutes or until set.
    Let stand for 5 minutes. Serve warm.
    Makes 8 servings.
