Breakfast - Herb Omelet

List of Ingredients
1 egg plus 1 egg white
pepper to taste
1/2 tsp. vegetable oil,
...(or can substitute with a non stick cooking spray for less calories)
1 tsp. dried parsley or 3 tbsp. fresh chopped,
...(or use chives or another of your choice)
Recipe
Whisk the egg and egg white in a small bowl until frothy, about 3 minutes.
Season with the pepper.
Use a 6" non stick frying pan and heat the oil, OR coat the frying pan with the non stick cooking spray, then heat the pan.
Pour the eggs into the pan, sprinkle with parsley and cover.
Cook for 2 - 3 minutes, until puffy.
Fold over and slide on to dish.
