Breakfast - Morning Muffins

List of Ingredients
3/4 c. low sugar bran cereal (flakes or nuggets)
3/4 c. skim milk
1 whole egg
1 egg white
1 tbsp. canola oil
1/4 c. unsweetened applesauce
1 tbsp. honey
1 tbsp. Splenda sugar substitute
1 c. quick cooking oats
1/3 c. whole wheat flour
1/3 c. white flour
1/2 c. raisins or currants
1 tsp. vanilla
1 tsp. cinnamon
2 tsp. baking powder
Recipe
Preheat the oven to 375. Paper line or coat muffin pan with non stick cooking spray.
Combine all ingredients and mix until blended. Do not over beat.
Pour the batter into muffin cups and bake for 20 - 25 minutes.
Let cool slightly in pan. Then remove from pan and let cool completely.
Makes 12.
