BreadMuffin - Mozzarella Corn Loaf

List of Ingredients
2 tsp. + 1 c. cornmeal, divided
1 1/2 c. flour
1 tsp. powdered sage
2 tsp. baking powder
1 tsp. salt
3/4 tsp. ground black pepper
1/2 tsp. baking soda
1/8 tsp. cayenne pepper, optional
2 eggs
1 1/4 c. buttermilk
1/4 c. vegetable oil
1 c. shredded part-skim mozzarella or provolone cheese (4oz.)
Recipe
Preheat oven to 350. Grease an 8x4x2" loaf pan.
Sprinkle the 2 tsp. cornmeal on the bottom and sides of the greased pan and set aside.
In a large bowl, combine the 1 c. cornmeal, flour, sage, baking powder, salt, pepper, baking soda and cayenne pepper. Set aside.
In a smaller bowl, beat the eggs, buttermilk and oil together.
Stir wet ingredients into dry ingredients just until moistened.
Fold in cheese.
Pour into pan and bake for 40 - 50 minutes or until a tester comes out clean.
Cool for 10 minutes before removing from the pan to a wire rack.
Refrigerate leftovers.
16 one slice servings.
