    Fish - Mussels with Broth

    List of Ingredients

    2 pounds mussels, in shells,
    ...(soaked in cold salted water for at least 30 minutes,
    ...rinsed and the tuft removed that sticks out of one
    ...side of the shell)
    2 tablespoons I Can't Believe It's Not Butter Light
    1/4 cup finely chopped onion
    2 minced garlic cloves
    1 cup dry white wine
    1 cup reduced sodium or homemade chicken broth
    1/2 teaspoon freshly ground pepper
    2 teaspoons dried parsley or 2 tablespoons freshly chopped

    Recipe

    Use a large, deep skillet or saute pan.
    Melt the butter light in the pan.
    Saute the onions and garlic for about 5 minutes, until tender.
    Stir in the wine, broth, and pepper.
    Bring to a boil.
    Simmer, uncovered, for 5 minutes.
    Add the mussels to the pan. Cover.
    Cook for about 8 minutes, shaking the pan frequently, until the
    mussels are fully open.
    Remove any mussels that are not open.
    Divide the mussels and broth into 4 deep soup bowls.
    Sprinkle with parsley and serve.
    Makes 4 servings.
