Dessert - Orange Tapioca

List of Ingredients
1 1/2 c. fat free milk
3 tbsp. quick cook type tapioca
1 large beaten egg or 1/4 c. egg substitute
1 tbsp. sugar substitute
pinch of salt
1/2 c. orange juice
1/2 tsp. pure vanilla extract
1 orange, peeled, seeded, and diced
Recipe
Combine the milk, tapioca, egg, sugar, and salt in a small non stick saucepan.
Cook over a medium heat, stirring constantly, until the mixture comes to a boil.
Remove from the heat.
Slowly add the orange juice, stirring constantly.
Return to the heat, stirring constantly until the mixture comes to a boil again.
Remove from the heat. Let cool for 10 - 15 minutes, stirring occasionally.
Mix in the vanilla and the diced orange.
Refrigerate for 2 hours to chill well before serving.
