This is also low fat, fluffy and high fiber.
List of Ingredients
1 cup 1 percent fat buttermilk
1/2 cup quick cooking rolled oats
2/3 cup unprocessed, uncooked wheat bran
1/4 cup egg substitute, or 1 large egg
1/4 cup whole wheat flour
2 teaspoons sugar substitute or sugar
3/4 teaspoon baking soda
1/4 teaspoon salt
Recipe
Combine the buttermilk, oats, and bran together in a large
bowl. Let stand for 5 minutes.
Add the egg and beat until blended.
Use a small bowl to stir together the wheat flour, sugar,
baking soda, and salt. Add to the bran mixture and blend
until all the flour is moistened.
Coat your frying pan or a griddle with cooking spray.
Pour about 1/4 cup batter for each pancake into the pan.
Cook for about 3 minutes, or until bubbles form on the top
and the edges are dry.
Carefully flip over and cook the pancakes 2 minutes more.
