    Cake - Pineapple Upside Down Cake

    List of Ingredients

    1 20oz. can unsweetened crushed pineapple, drained,
    ...reserve 1/3 c. of the juice
    1 3oz. pkg. sugar free lemon gelatin
    egg substitute equal to 2 eggs
    1 egg white
    3/4 c. Splenda sugar substitute
    1 tsp. vanilla extract
    3/4 c. flour
    1 tsp. baking powder

    Recipe

    Preheat oven to 350. Line a 9" round baking pan with waxed paper. Then coat with nonstick cooking spray.
    Stir together flour and baking powder and set aside.
    Spread pineapple over waxed paper and sprinkle with the gelatin.
    Beat egg substitute and egg white in a bowl.
    Beat in sugar, reserved juice and vanilla.
    Add flour mixture to egg mixture and stir well. Pour over gelatin.
    Bake for 25 - 30 minutes or until a tester comes out clean.
    Cool for 5 minutes.
    Invert onto a serving plate. Serve warm.
    Makes 10 - 12 servings.
