    DressingSalad - Potato + Green Bean Salad

    List of Ingredients

    1 lb. new, small, red or Yukon Gold potatoes, peeled
    2 c. fresh green or wax beans, ends trimmed,
    ...and cut into 1" pieces (1/2 lb.)
    1/4 c. Olive oil
    2 tbsp. Dijon mustard
    2 tbsp. cider vinegar
    2 tsp. dried chopped chives
    2 tbsp. crumbled blue cheese, optional

    Recipe

    Cook the potatoes in a large pot with boiling water for 6 minutes.
    Add the beans to the pot and continue to boil until the potatoes are
    tender and the beans are cooked to your tenderness or crisp tender,
    about 4 to 6 minutes longer. Drain.
    Cut the potatoes into bite size pieces and place in a large bowl.
    Add the beans.
    Use a small bowl to whisk together the oil, mustard, and vinegar.
    Pour over the warm potatoes and beans and toss.
    Cover and chill at least 4 hours.
    Just before serving, stir in the chives and cheese.
    Makes 8 servings.
