Dessert - Rice + Raisin Pudding

2 slightly beaten large eggs, or 1/2 c. egg substitute
2 c. leftover cooked rice
1 1/2 c. fat free milk
2 tbsp. subar substitute
1/2 c. golden raisins
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. salt
Recipe
Preheat the oven to 350. Coat a 1 1/2 quart baking dish with non stick cooking spray.
Combine all the ingredients together in a bowl.
Stir gently to mix and place in the baking dish.
Place baking dish in a shallow pan on the middle oven.
Pour hot water around the baking dish so it is 1 inch up the sides of the dish.
Bake for 45 minutes, or until a knife inserted comes out clean.
Serve the pudding warm or chilled.
