Fish - Scallops + Shrimp in Cream Sauce

for the sauce:
1 tbsp. I Can't Believe It's Not Butter Light
2 1/2 tsp. flour
1/3 c. unsweetened apple juice or dry white wine
1/2 c. 2% milk
1 tbsp. I Can't Believe It's Not Butter Light
1 tsp. crushed garlic
1/3 c. chopped green onions
1 lb. mixture of scallops and shrimp
1 tbsp. dried parsley or 1/4 c. freshly chopped
2 ounces crumbled goat or feta cheese
Recipe
for the sauce:
Melt butter light in a small saucepan.
Stir in the flour. Cook while continuing to stir for for 1 minute.
Add juice and milk.
Continue to cook, stirring, until thickened and smooth, approximately
2 minutes. Set sauce aside and keep warm.
In a non stick frying pan, melt butter light.
Saute the garlic, green onions and seafood just until seafood is opaque.
Remove from stove; add sauce and mix well.
Pour into serving dish. Sprinkle parsley and cheese over top.
