Cookie - Shortbread Cookies

List of Ingredients
2 cups flour
1 1/2 teaspoons baking powder
1/2 corn or canola oil
1 large egg
2 tablespoons white granulated sugar
1 teaspoon pure vanilla extract
1/4 cup water
Recipe
Preheat oven to 350 degrees F.
Coat a cookie sheet with cooking spray.
Combine all the ingredients in a large bowl until it forms
a soft dough.
Refrigerate for at least 1 hour.
Roll/pat out to 1/4 inch thick on a floured board.
Cut into 2 inch round shapes.
Place 1 inch apart on the cookie sheet.
Bake for 15 - 20 minutes, or until the edges are a light golden
brown. Let cool, then store in an airtight container.
Makes 2 dozen cookies or 24 servings.
