Fish - Shrimp Curry

2 tbsp. I Can't Believe It's Not Butter Light
1/4 c. chopped onions
1 small minced garlic clove
1 c. fat free milk
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. curry powder
1/8 tsp. freshly ground pepper
1 lb. raw medium shrimp, cleaned, (12oz. after peeling)
Recipe
Melt the butter light in a medium non stick saucepan over
a medium heat.
Saute the onion and garlic about 5 minutes, until soft.
Stir in the milk, flour, salt, curry, and pepper.
Whisk and simmer until the sauce is thickened, about 5
minutes. Set aside.
Drop the shrimp in a pot of boiling water.
Return to a boil. Reduce heat and simmer for 4 minutes,
or until the shrimp turn pink and are just cooked through
(do not overcook). Drain well.
Stir the shrimp into the sauce and heat thoroughly.
Taste and add more curry or pepper, if desired.
