Fish - Spicy Fish Stew

2 c. sliced mushrooms, (8 ounces fresh)
1 c. thinly sliced celery
1 c. chopped onion
2 minced garlic cloves
1 tbsp. Olive oil
1 tsp. dried thyme or 1 tbsp. freshly chopped
2 tsp. sugar substitute
1 quart vegetable juice cocktail or tomato juice
1 bay leaf
1/2 tsp. hot pepper sauce
1 pound firm, white fish fillets such as cod, perch,
...catfish, cut into 1 inch pieces, thawed if frozen
1 tbsp. dried parsley
Recipe
In a large saucepan, saute the mushrooms, celery, onion, and
garlic in oil over medium heat about 5 minutes.
Add the thyme and sugar substitute. Saute 1 minute.
Add the vegetable juice, bay leaf, and hot sauce. Bring to a boil.
Add the fish. Cover. Reduce heat and simmer about 10 minutes.
Discard the bay leaf; stir in the parsley and serve hot.
Makes 2 quarts or 8 servings.
