    Dessert - Tapioca Pudding with Pineapple

    List of Ingredients

    3 tablespoons quick cook tapioca
    1/8 teaspoon salt
    1 beaten egg
    2 3/4 cups fat free milk
    2/3 cup sugar substitute
    1/2 cup unsweetened pineapple bits, drained
    1/4 cup golden raisins
    1/4 cup dried cranberries
    ground cinnamon and nutmeg for garnish

    Recipe

    Mix all the ingredients except the cinnamon and nutmeg in
    a medium saucepan.
    Let set for 5 minutes.
    Then place on a medium heat and bring to a boil, stirring constantly.
    Remove from the heat.
    Let sit for 20 minutes, then stir slightly.
    Pour into 6 individual serving dishes.
    Refrigerate until chilled and set.
    Sprinkle with cinnamon and nutmeg, if desired.
