DressingSalad - Ten Layer Salad w/Herb Cream Dressing
for the salad:
2 c. thinly sliced romaine lettuce
1 c. thinly sliced red cabbage
1 med. sliced red, or green bell pepper
1 c. raw broccoli or cauliflower florets
1 c. fresh sliced mushrooms
1 c. fresh sliced carrots
1 c. cherry tomatoes, cut in halves
1/2 c. thinly sliced cucumber
1/2 c. thinly sliced red onion
herbed cream dressing (below)
finely chopped parsley leaves for garnish
for the herb cream dressing:
3/4 c. fat free mayonnaise
3/4 c. fat free sour cream
2 - 3 cloves fresh minced garlic
1/2 tsp. dried basil
1/2 tsp. dried tarragon
1/4 tsp. salt
1/8 tsp. pepper
for the salad:
Arrange the lettuce in the bottom of a 1 1/2 quart glass bowl.
Lay remaining vegetables in layers over top of the lettuce.
Spread herb dressing over the top of salad and sprinkle with parsley.
Loosely cover and refrigerate for 8 hours or overnight.
Toss before serving.
Serves 8.
for the herb cream dressing:
Mix all the ingredients in a small bowl.
Makes about 1 1/2 cups.
