BreadMuffin - Yogurt Muffins

Recipe Introduction
Topped with fresh fruit and frozen yogurt, these are great to serve for dessert.
List of Ingredients
1 1/2 c. whole wheat flour
1 c. white flour
1/4 c. Splenda sugar substitute
2 tsp. baking powder
2 beaten eggs
1 c. evaporated skim milk
1 tbsp. canola oil
1/4 c. unsweetened applesauce
2 tbsp. cinnamon
1/4 c. warm water
3 c. sliced bananas
1 1/2 c. sugar free, low fat, any flavor frozen yogurt (vanilla)
Recipe
Preheat the oven to 350. Coat muffin tin with paper or with non stick cooking spray.
Mix the flours, Splenda, and baking powder in a medium bowl. Set aside.
Combine the eggs, skim milk, oil, and applesauce in a large bowl.
Slowly add the dry ingredients to the wet ingredients and mix until blended. Do not over beat.
Mix together the cinnamon and water. Swirl this mixture through the batter.
Pour batter into muffin cups and bake for 25 - 30 minutes.
Let cool slightly. Remove muffins from pan, split, and place on dessert plates.
Fill muffin centers with bananas and yogurt for serving.
Makes 12.
