Pasta - Cheese Lasagna

List of Ingredients
6oz. whole wheat lasagna noodles or enriched lasagna noodles,
...cooked al dente to pkg. directions, drained
1 c. tomato sauce
1 c. mixture of chopped onion, pepper, + mushrooms
1 1/2 c. low fat cottage cheese
2 tsp. powdered garlic
1/8 tsp. dry oregano
2 eggs
3oz. grated Mozzarella cheese
1 tbsp. + 2 tbsp. freshly grated Parmesan cheese
Recipe
Preheat oven to 350. Need an 8x8x2" casserole dish.
Combine tomato sauce, and the onions, peppers and mushrooms mixture together. Set aside.
In another bowl, mix the cottage cheese, garlic, oregano, eggs, Mozzarella cheese, and 1 tbsp. of the parmesan cheese together. Set aside.
Lay half of the noodles in the bottom of the casserole.
Top with the cottage cheese mixture.
Top with 1/2 the tomato sauce mixture.
Layer with the the rest of the noodles.
Pour remaining 1/2 of the tomato sauce on and sprinkle with the 2 tbsp. parmesan cheese.
Bake for 25 minutes.
