Chicken, Rigatoni + 3 Pepper Sauce
1/2 pound rigatoni or other tube pasta, uncooked
2 tablespoons Olive oil
1/2 medium chopped onion
1/2 large green bell pepper, julienned
1/2 large red bell pepper, julienned
1/2 large yellow bell pepper, julienned
1 minced garlic clove
1 chopped tomato
1/4 cup low sodium chicken broth
3/4 teaspoon dried parsley
1/4 teaspoon dried basil
1/8 teaspoon crushed red pepper
1 tablespoon lemon juice
salt and pepper to taste
4 cooked boneless, skinless chicken breasts
Recipe
Cook the rigatoni according to package directions, without adding salt, drain and set aside.
Heat the oil in a large frying pan, over a medium heat.
Add the onion, peppers and garlic and saute for 6 minutes.
Add the tomatoes, chicken broth, parsley, basil, crushed red pepper, salt, pepper and the lemon juice. Stir.
Place the chicken back into the pan and cook over a low heat until just warmed in the sauce.
Place the pasta on a serving platter.
Spoon the chicken and sauce over top of the rigatoni and serve.
