Meat - Chicken with Wine Sauce

List of Ingredients
6 boneless, skinless chicken breasts (24oz.)
1 teaspoon butter
1 teaspoon oil
3 tablespoons cornstarch
1 1/2 cups unsalted chicken broth
1/3 cup skim milk
1/3 cup lemon juice
1/3 cup dry white wine
3 crushed garlic cloves
1/4 cup freshly grated Parmesan cheese
Recipe
Wash chicken breasts and set aside.
Preheat oven to 350. Coat a 9x13x2 inch baking dish with cooking spray.
Melt the butter in a large frying pan over a medium/high heat.
Brown the chicken on both sides and remove to the baking dish.
Pour the oil into the hot frying pan.
Stir in the cornstarch and a small amount of chicken broth and stir until smooth.
Remove the pan from the heat and, slowly, add 1 c. of the broth.
Return the pan to the heat, stir constantly, and add the remaining broth.
Stir in the milk, lemon juice, wine, and garlic.
After the sauce has become slightly thick, pour over the chicken breasts.
Sprinkle the cheese over the chicken pieces and bake for 30 minutes.
Makes 6 servings.
Serve over brown rice, whole wheat pasta, or gnocchi.
