List of Ingredients
1/2 c. I Can't Believe It's Not Butter Light
1 c. boiling water
1 c. flour
1/2 tsp. salt
4 room temperature eggs
your favorite filling or:
1 small tub low cal frozen whipped topping, thawed
1/2 3oz. pkg. instant vanilla pudding
Recipe
Preheat oven to 450. Coat a baking sheet with non stick cooking spray.
Sift together the flour and salt. Set aside.
Melt the butter light in the boiling water.
Add the flour mixture to the boiling liquid all at once.
Stir until the mixture leaves the side of the pan in a compact ball.
Let cool 1 minute.
Place in a large mixing bowl and add one egg at a time, beating well after
each addition.
Drop by rounded teaspoonfuls onto baking sheet.
Bake for 10 minutes, lower temperature to 400 and bake for about 25 minutes.
Let cool.
Cut tops off puffs, then fill with your favorite filling or you can try
piping the filling in
Or:
Stir the instant pudding into the whipped topped and fill the puff.
Most diabetics can have this.
