    Vegetable - Dijon Beets

    List of Ingredients

    butter flavor cooking spray
    1/3 cup minced raw onion
    2 minced garlic cloves
    2 teaspoon lemon juice
    1/3 cup fat free sour cream
    2 tablespoons Dijon mustard
    salt and pepper to taste
    2, 14 1/2 ounce cans cut or sliced beets, with juice

    Recipe

    Coat a small saucepan with cooking spray.
    Use a medium heat and saute the onion and garlic for 3 - 4 minutes, until tender.
    Stir in the lemon juice, sour cream, mustard, and lemon juice.
    Use a low heat, add the beets, stir gently until hot.
    Season to taste with salt and pepper.
    Makes 4 servings.
