    1 1/2 cups ripe, sliced, mixed fruits,
    ...(nectarines, plums, peaches, or pitted cherries)
    2/3 cup fat free evaporated milk or low fat sour cream
    1 large beaten egg, or substitute
    2 tablespoons flour
    2 tablespoons sugar or substitute
    1/2 teaspoon vanilla extract
    1/8 teaspoon ground nutmeg
    1/8 teaspoon salt
    1 tablespoon sifted powdered confectioners sugar,
    ...or substitute

    Recipe

    Preheat oven to 375 degrees F.
    Coat an 8x8x2 inch glass pie plate with cooking spray.
    Layer the fruits in the bottom of the plate.
    Combine the milk, egg, flour, sugar, vanilla, nutmeg,
    and salt together in a blender/food processor.
    Blend until smooth.
    Pour over top of the fruit.
    Bake for 35 - 40 minutes, or until puffed and golden brown.
    Cut into slices and serve warm, sprinkled with the powdered
    sugar. Makes 6 servings.
