PiePastry - Fresh Strawberry Pie

List of Ingredients

1 baked pie crust
1 quart strawberries, cleaned and sliced
3 tbsp. cornstarch
1 8oz. pkg. softened cream cheese
2/3 c. + 1/3 c. unsweetened apple juice


Recipe

Place 1 c. of the sliced strawberries in 2/3 c. of the apple juice.
Heat and bring to a simmer for 3 minutes.
Mix the cornstarch with the 1/3 c. apple juice.
Stir the cornstarch mixture into the simmered strawberries.
Stir constantly, until thickened, approximately 1 minute.
Spread the cream cheese over the pie crust.
Place the uncooked, sliced strawberries on top of the cream cheese.
Pour the cooked strawberries on top.
Chill for 3 - 4 hours before serving.
