Vegetable - Ginger Orange Carrots

List of Ingredients
6 med. sliced carrots, (about 3/4 lb.),
...can even use the small baby carrots, (my personal favorite!)
1/2 c. canned reduced sodium chicken broth,
...or homemade
1/4 c. orange juice
2 tsp. I Can't Believe It's Not Butter Light
1 tsp. ground ginger
Recipe
Place the carrots and broth in a medium saucepan.
Cover and bring to a boil. Reduce to a simmer.
Continue to simmer over a low heat until almost tender, about 10 minutes.
Add the orange juice, butter light, and ginger.
Continue to simmer, uncovered, until almost all the liquid is absorbed.
Makes 4 servings.
