Vegetable - Glazed Sweet Potatoes

List of Ingredients
2 1/2 lbs. fresh sweet potatoes or yams, peeled
1/4 c. I Can't Believe It's Not Butter Light
2 tbsp. packed brown sugar, or substitute
2 tsp. brown sugar substitute
1/4 c. chopped pecans, optional
Recipe
Cut the sweet potatoes in half crosswise.
Place in large pot with lightly salted water to cover.
Bring to a boil and cook until tender, about 20 minutes. Drain.
Preheat oven to 350. Coat a 1 1/2 quart baking dish with non stick cooking spray.
When the potatoes are cool enough to handle, cut crosswise in 1/4" thick slices.
Place half the potatoes in the baking dish.
Top with 1/2 of the butter light, 1/2 of the brown sugar/substitute and 1/2 of the brown sugar substitute.
Repeat.
Top with pecans and bake for 20 - 25 minutes or until the pecans begin to brown.
Makes 8 servings.
