List of Ingredients
1, 2 1/2 - 3 pound sirloin half leg of lamb,
...trimmed of bone/fat, butterflied
3 garlic cloves, cut into slivers
2 teaspoons dried rosemary
1 teaspoon salt
1 teaspoon cracked black peppercorns
sprigs of fresh mint for garnish
Recipe
Preheat the oven to 325 degrees.
Cut small, deep slits in the lamb with the point of a sharp
knife. Insert a garlic silver in each slit.
Stir together the rosemary, salt and pepper.
Rub the of the lamb with the mixture and place on a rack
in a shallow roasting pan.
Cook about 1 hour, or until thermometer inserted in the
thickest part of the meat registers 145 degrees.
Tent the foil and let set for 10 minutes before carving on
a carning board, to set juices.
Thinly slice across the grain.
Pour any juices from the board over the lamb slices.
Serve garnished with mint.
