    Meat - Cornish Hens

    2, 1 1/4 pound each, skinless Cornish game hens
    1/4 teaspoon dried dill weed
    1/4 teaspoon dried oregano
    1/4 teaspoon ground black pepper
    dash paprika
    1 tablespoon virgin Olive oil
    1 minced garlic clove
    2 minced shallots
    1/2 cup white grape or apple juice
    1 tablespoon frozen orange juice concentrate
    1 tablespoon chopped parsley for garnish
    2 tablespoons slivered blanched almonds for garnish

    Preheat oven to 350 degrees F. You will need a baking
    dish large enough to hold the hens with liquid.
    Cut each hen in half. Remove bones and discard.
    Mix the dill weed, oregano, pepper, and paprika together.
    Season both sides of hens with this mixture.
    Pour the oil into a large non stick frying pan and heat.
    Saute hens for 4 minutes on each side; then placae in the
    baking dish.
    Place the garlic and shallots to the pan. Saute for 1 minute.
    Add the grape and orange juices to the pan. Swirl to mix
    together and then pour over the hens. Cover with foil.
    Bake for 20 minutes, basting a few times.
    Uncover dish and increase oven temperature to 425 degrees
    F. Bake for 5 more minutes.
    Garnish with parsley and almonds, if desired.
    Makes 4 servings.
