    PiePastry - Pumpkin Pie #3, ( a cream pie)

    List of Ingredients

    1 15oz. can canned pumpkin
    3/4 c. sugar substitute
    1/2 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/4 tsp. cloves
    pinch nutmeg
    3 slightly beaten eggs
    1 1/4 c. regular milk
    1 6oz. can evaporated milk
    1 9" unbaked pie crust, crimped high

    Recipe

    Preheat oven to 400.
    Thoroughly combine the pumpkin, sugar substitute, salt, cinnamon, ginger,
    cloves and nutmeg togehter.
    Add the eggs, milk, and evaporated milk and blend well.
    Pour into the pie crust. This is a generous filling so it is important to
    crimp the edge high.
    Bake for 60 minutes or until knife inserted halfway between center and outer
    edge comes out clean.
    Let cool.
