2 teaspoons light margarine
3/4 cup chopped onion
1, 16 ounce can solid pack pumpkin, (not pie filling)
2 cups low salt chicken broth
2 teaspoons sugar substitute or sugar
1/2 teaspoon salt
1/8 teaspoon ground cloves
1 cup fat ree milk
Recipe
Melt the margarine in a medium saucepan and saute the
onion for 5 minutes, until softened.
Add the pumpkin, broth, sugar substitute, salt and cloves.
Stir well to combine.
Bring to a boil. Then simmer for 15 minutes.
Pour into a blender/food processor and blend until smooth.
Pour back into the saucepan and slowly add the milk.
Heat well but do not allow to boil. Serve immediately.
Makes 5, 1 cup servings.
