    Vegetable - Ratatouille, (eggplant/zucchini)

    List of Ingredients

    2 tbsp. oil
    1 large sliced onion
    2 cloves minced garlic
    1 med. diced eggplant
    2 small sliced zucchini
    3/4 c. thinly sliced green bell pepper
    2 med. chopped tomatoes, chopped
    1 tsp. dried basil
    1/2 tsp. salt
    1/4 tsp. ground pepper
    1 tbsp. capers, drained

    Recipe

    Heat the oil in a large non stick frying pan.
    Add the onions and garlic and stir fry over a med/high heat for about 2 minutes.
    Add the eggplant and stir fry for about 2 minutes.
    Add the zucchini, green pepper, and tomatoes and stir fry for 3 more minutes.
    Add the basil, salt, and pepperand stir.
    Cover and let simmer for 30 minutes over a low heat.
    Uncover, stir gently, and simmer for 10 more minutes.
    Add the drained capers.
    This may be served hot or chilled.
    Makes 6 servings.
