SoupStew - Snow Pea Soup
4 cups chicken broth
2 large chopped mushrooms
1 minced garlic clove
1/ teaspoon ground ginger
1 teaspoon low salt soy sauce
1, 5 ounce container bean curd,
...cut into 1/2 inch cubes, (tofu)
1 cup trimmed + chopped snow peas
1/4 cup minced green onions for garnish
Place the broth, mushrooms, garlic, ginger and soy sauce
into a saucepan and bring to a boil.
Cover and simmer for 5 - 7 minutes.
Add the bean curd snow peas to the saucepan and let
cook for 2 minutes.
Garnish with green onions, if desired.
Makes 4 servings.
