Vegetable - Stir Fried Zucchini

List of Ingredients
1 tbsp. canola or corn oil
1 lb. zucchini, cut into 1 1/2 - 2" strips
1 medium sweet onion, peeled and cut into thin wedges
1/2 tsp. freshly grated gingerroot
1 tbsp. sesame seeds
1 tbsp. light soy sauce
1 1/2 tsp. dark roasted sesame oil
Recipe
Heat the oil in a large non stick frying pan over a medium heat.
Add the zucchini, onion, and gingerroot.
Stir fry for about 5 - 8 minutes.
Sprinkle with the sesame seeds, soy sauce, and sesame oil.
Toss to blend.
Makes 4 servings or about 3 cups.
