    Vegetable - Sweet Pepper + Onion Stir Fry

    List of Ingredients

    1 tbsp. extra virgin olive oil
    1 small thinly sliced yellow bell pepper
    1 small thinly sliced red bell pepper
    1 small thinly sliced green, orange, or purple bell pepper
    1 large onion, cut into thin wedges
    1 clove minced garlic
    1/4 tsp. salt

    Recipe

    Heat the oil in a large non stick frying pan over a medium/high heat.
    Add the peppers and onion; and stir fry for 3 minutes.
    Add the garlic and continue to stir fry for 2 - 3 minutes longer, or until the vegetables are crisp tender.
    Sprinkle with salt.
    Makes 4 servings.
