SoupStew -Three Onion Mushroom Soup

List of Ingredients
3 c. thinly sliced onions
1 1/2 c. thinly sliced leeks, white part only
1/2 c. chopped shallots or green onions with tops
1 tbsp. I Can't Believe It's Not Butter Light
1 tsp. sugar
1/4 lb. sliced mushrooms
6 1/2 c. reduced sodium, fat free chicken broth
salt and pepper to taste
Recipe
Cook onions, leeks, and shallots in the butter light
in a covered saucepan, over a medium/low heat for
15 minutes.
Stir in sugar.
Continue to cook, uncovered, until the onion mixture
is golden, about 10 minutes longer.
Stir in mushrooms and and cook over a medium heat
until tender, about 5 minutes.
Add the broth and heat to boiling.
Reduce heat and simmer, uncovered, 15 minutes.
Season to taste with salt and pepper.
Makes 6 1/2 cup servings.
