Sidedish - Rice + Black Beans
Olive oil cooking spray
1/4 cup chopped white onion
1/4 cup sliced green onions and tops
4 minced garlic cloves
1 cup converted rice
2 1/2 cups reduced sodium + fat free chicken broth
1, 15 ounce can black beans, rinsed + drained
2 teaspoons dried cilantro
salt and pepper to taste
Coat a medium saucepan with the cooking spray and
use a medium heat until hot.
Saute the onions, and garlic for about 5 minutes, or
until tender.
Add the rice and continue to saute/cook on a medium heat
for 2 - 3 minutes, or until the rice is lightly browned.
Add the chicken broth and bring to a boil.
Cover and simmer for 20 - 25 minutes, or until rice is tender.
Add the beans during last 5 minutes of cooking.
Stir in the cilantro and sprinkle with salt and pepper to taste.
