Meat - West Coast Chicken Breast

List of Ingredients
4 boneless, skinless, chicken breasts, (about 1 lb.)
1/4 c. oil packed, well drained, chopped sun dried tomatoes
1 tbsp. dried basil leaves
1 minced garlic clove
1 tbsp. olive oil
1/4 tsp. ground black pepper
1/4 tsp. ground paprika
1 slice whole wheat bread, crumbled to soft crumbs
Recipe
Preheat the oven to 425. Coat a shallow baking dish with olive oil non stick cooking spray.
Pound the chicken breasts down to a 1/4" thickness.
Combine the tomatoes, basil, and garlic in a small bowl spread evenly over the breasts.
Roll up and place seam side down in the baking dish.
Combine the oil, pepper, and paprika in a small bowl and brush evenly over the chicken.
Sprinkle the chicken with the bread crumbs and press onto the chicken so they stick.
Bake for 15 minutes, or until the chicken is tender and the crumbs are browned.
Makes 4 servings.
