Sidedish - Wild Rice with Apple + Pecan

List of Ingredients
1/2 c. uncooked wild rice
1 small, very thinly sliced onion
2 tsp. I Can't Believe It's Not Butter Light
1 c. unsweetened apple juice
1 c. reduced sodium chicken broth
1/4 tsp. salt, optional
1/4 tsp. ground cinnamon
1 diced apple
1 tbsp. chopped pecans, optional
Recipe
Wash the rice in cold water and drain well.
Use a medium frying pan to saute the onion in the butter light until tender, about 5 minutes.
Stir in the rice and cook for 1 minute.
Add the juice, broth, salt, and cinnamon and bring to a boil.
Reduce the heat, cover and simmer about 45 minutes, until the rice is tender and most of the liquid is absorbed.
Stir in the apple. Cover again and let set for 5 minutes.
Drain off any excess liquid before serving.
Sprinkle with the chopped pecans, if desired.
Makes 4 servings.
