    Cream Cheese Fruit Dip

    List of Ingredients




    1/2 c. sugar
    4 tsp. cornstarch
    1/2 tsp. salt
    1 c. unsweetened pineapple juice
    3 tbsp. lemon juice
    2 beaten eggs
    2 3oz. pkgs. cream cheese, softened

    Recipe



    Combine the sugar, cornstarch and salt in saucepan.
    Blend in the pineapple and lemon juices, making sure there are no lumps.
    Cook over a medium heat, stirring constantly, until clear, approximately 5 - 8 minutes.
    Slowly pour the hot cooked mixture into the beaten eggs, beating quickly.
    Return the mixture to the saucepan and cook over a low heat, stirring constantly for approximately 3 - 5 minutes or until mixture the thickens slightly.
    Let cool at least 5 minutes.
    Beat the cream cheese in a small bowl.
    Then blend the cheese into the cooled mixture.
    Chill thoroughly.
    Place the dip in a bowl for serving.
    Refrigerate any leftovers.
