Roasted Onion Guacamole
1 lg. red onion, chopped
2 garlic cloves, chopped
2 tablespoons balsamic vinegar
1-tablespoon olive oil
4 small ripe avocados, peeled
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon dried Italian seasoning
Combine first 4 ingredients and place in a foil lined baking dish.
Bake at 425 for 25 to 30 minutes or until lightly browned. Stirring
once. Cool. Mash avocados in a medium bowl; stir in the onion
mixture, lemon juice, salt and Italian seasoning. Chill at least 1
hour.
Makes approximately 2 cups.
