Amish - Meat Loaf
for loaf:
2 pounds ground beef
2 1/2 cups crushed butter flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon
for top (bbq like):
1 cup ketchup
2 Tablespoons white vinegar
3/4 tsp. salt, or to taste
2 Tablespoons prepared yellow mustard
1/2 cup brown sugar
Heat the oven to 350 degrees F.
In a medium bowl, mix together ground beef, crushed
crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar
until well blended.
Press into a 9 x 5 inch loaf pan.
Place the slices of bacon over the top.
Bake for 1 hour, or until cooked through.
While the loaf bakes, mix together the top ingredients.
Spread over the top of the meat loaf for the last 15 minutes
of baking.
Makes 8 servings.
****** Notes....
I did not use as much ketchup as the recipe called for....
in the meat mixture I only used 1/2 cup instead of 3/4 cup...
In the topping mixture I only used about 1/2 to 3/4 cup of ketchup.
I think you could really make up only 1/2 of the topping recipe
as I only used about half of what I made up, unless you want to
use it on the side.
