Danish - Soup Dumplings
1 tsp salt (optional)
1/2 cup butter or margarine
1 cup flour
1 cup boiling water
4 eggs
Melt butter in a pan over low heat, add flour, stir well; add boiling
water gradually. Stirring well after each addition. Remove from
heat. Let cool 15 minutes. Add eggs, beat. Drop almond shaped
dumpling dough from a spoon into simmering salted water. Let simmer
for 10 minutes. Agitate the water occasionally so the dumplings will
turn over and cook more evenly. Do not boil as they will
disintegrate. Add to soup and serve.
