Finnish - Berry Pie
for crust:
1 1/2 c. butter
2 eggs, beaten
1 tsp. baking powder
3/4 c. sugar
2 2/3 c. flour
24 ounces frozen berries (3 cups)
for berry filling:
1 pound sour cream (16 ounces)
1/3 c. sugar
2 eggs
1 tsp. vanilla
for crust:
Cream butter and sugar.
Add eggs, mixing well.
Add flour and baking powder.
Spread 1/2 inch thick in 9x13x2 inch baking pan, forming ridge around outside.
for berry filling:
Cream together sour cream, eggs, sugar and vanilla.
Layer berries on top of crust.
Pour prepared filling over berries.
Bake at 400 degrees F.for 20- 35 minutes.
Adjust sugar according to berries' sweetness.
