German - Mashed Potatoes
5 med. potatoes, peeled, 1/4'd 1/2 tsp. salt
2 Tbsp. butter
ground white pepper to taste
1/2 c. sour cream
1 Tbsp. horseradish
2 tsp. minced parsley
Cook potatoes in boiling salted water in a medium
size saucepan until tender, drain.
Mash potatoes, adding 1 tbsp. of the butter and
the pepper.
Add sour cream, horseradish, and minced parsley.
Whip as for mashed potatoes.
Place in serving bowl; top with the other tbsp. of
the butter, melted and serve.
Makes 4 servings.
