German - Meatloaf, w/bacon gravy
1/2 pound lean ground beef
1/2 pound pure ground pork
1 medium chopped onion
3 Tablespoons breadcrumbs
3 Tablespoons cold water
2 large eggs
1/2 teaspoon salt
1 teaspoon ground paprika
1 teaspoon prepared yellow mustard
2 Tablespoon freshly chopped parsley
4 slices chopped bacon
4 Tablespoons vegetable oil
1 cup hot beef broth
for gravy sauce:
1/4 cup hot water
1 teaspoon cornstarch
1/4 cup cold water
1/2 cup sour cream
Combine beef, pork, onion, breadcrumbs, cold water, and eggs.
Add salt, paprika, mustard, and parsley.
Shape into a loaf, resembling a flat bread loaf.
Cook bacon in Dutch oven 2 minuites.
Carefully add oil and heat.
Place meatloaf in Dutch oven and brown all sides.
Place in uncovered Dutch oven in a heated 350 degree F. oven
for 35-45 minutes.
While meat is baking and after loaf has set itself up, gradually
pour hot beef broth over top; brush w/pan drippings.
When done remove meat to a heated platter and keep warm.
Add the hot water to pan and scrape all particles from bottom.
Bring to a gentle boil.
Mix cornstarch and the cold water together. Add to pan. Stir
and cook until thickened and bubbly. Remove from heat and stir
in sour cream. Reheat to warm (DO NOT BOIL).
Season with salt and pepper.
Serve bacon gravy sauce on side.
