German - Strudels w/Tomato Gravy
1 package yeast
1 1/2 teaspoon sugar
1 1/2 teaspoon salt
1 1/2 cup water
3 eggs (beaten)
5 1/4 cups flour
tomato gravy recipe below
Combine yeast, sugar, salt, and water.
Add egg and flour. mix and knead well; let dough rest
1 hour or longer in covered bowl.
Divide into 4 portions.
Roll out into rounds about 1/8 inch thick.
Place rounds on dish towel or lightly floured surface
and spread with soft shortening or oil.
Stretch as much as you can then roll in the form of
a log; let these rest about 1/2 hour stretching
occasionally (they will get to be quite long).
Cut into 3 or 4 inch lengths.
Cook meat (chicken, pork, or beef) partly done in roaster;
add as many potatoes as you need, small onions as you like.
Add enough hot water to show up between the potatoes
and meat.
Let come to a boil; place the strudels on top and cover
with a tight lid.
Cook gently 25 to 3O minutes.
DO NOT LIFT THE LID. Let set 10 min.
This is the way I do them:
Also good to cook in a frying pan; put 3 or 4 Tbsp. shortening
in pan add 1 cup water; add strudels. Cover tightly and cook at
350 degrees until you hear them frying; turn down to 300 and
cook another 15 min. let set uncovered for 10 min.
DO NO LIFT THE LID. This takes about 2 hours & 40 min.
from start to finish.
Tomato gravy (for strudels)
1 Tablespoon vegetable shortening
1 medium onion, chopped
1 pint canned tomatoes
1 cup cream
Saute onion in shortening.
Add tomatoes, Let simmer for a bit.
Just before serving add cream
(do not use half and half it will curdle).
Heat through.
