    German - Weiner Schnhnitzel (pork w/mushroom sauce)

    4 slices pork loin
    1 cup flour
    2 eggs
    1 cup breadcrumbs
    salt and black pepper and paprika
    1 lemon
    oil (for frying)

    Wash and dry meat.
    Tenderize with meat hammer you want it flattened out
    Put flour in a bowl.
    Put beaten eggs in another bowl.
    Put breadcrumbs in a third bowl.
    Dredge each piece of meat into the flour, then the eggs and then the breadcrumbs until completely coated.
    Heat oil in frying pan.
    Fry pork on both sides.
    Ideally the coating will be medium brown when done.
    Watch the temperature of your oil--not too hot!
    Squeeze a quartered lemon over the pork before serving.

    Jaeger Sauce for Schnitzel

    1 cup fresh mushrooms chopped (or use canned strained mushrooms)
    1 1/2 cup water
    1/2 onion, diced
    1 package brown gravy mix
    2 tablespoons margarine
    2 tablespoons finely chopped parsley

    Melt margarine in a large saucepan.
    Add onion and mushrooms and fry until golden.
    Add water, bring to a boil, and blend in the brown gravy mix.
    Reduce heat to medium and cook for about 5-10 minutes.
    Before serving, sprinkle with finely chopped parsley.

    ip: Pour this sauce over schnitzel and serve with potatoes and a fresh garden salad.
    Makes 2 servings .
