German - Stuffed Peppers + Rice

4 peppers, (color doesn't matter, but the red ones taste sweeter)
for the stuffing:
1, 4 ounce can mushrooms, drained, optional
1/2 cup chopped onion
4 slices bacon, diced
1/2 pound ground beef
salt and ground black pepper
2 tablespoons tomato paste
1 1/2 teaspoons soy sauce
3 tablespoons any cheese, except Parmesan
8 tablespoons sour cream
2 - 4 packets rice in bag
fresh parsley for garnish, optional
butter for the pan
Recipe
Preheat oven to 400. Butter an 8x8x2 inch pan.
Cut tops off peppers. Clean insides out and wash. Dice up tops of peppers and set aside.
Cook shelled peppers in slightly salted water for 5 minutes, then drain.
Put diced pepper pieces, mushrooms, onion, bacon and meat with salt and pepper and cook until brown. Drain off excess fat.
Mix in tomato paste, soy sauce, sour cream, and cheese.
Stuff the peppers. Can sprinkle a little more cheese on top if you like.
Stand the peppers in pan and bake for 20 minutes.
Cook rice packets to package directions.
Serve with rice and garnish with parsley.
Makes 4 servings.
